EGGPLANT

Dried eggplant is the dry product produced from fresh eggplant and obtained as a result of production. Fresh eggplant contains approximately 92% water before being dried. The proportion of water in the dried fresh product by drying is reduced to very low values. As a result of drying, 1 kg of dried eggplant is obtained using approximately 12-13 kg of eggplant. During drying, the water in the product evaporates and the core of the product remains. For this reason, the nutritional values of dried Brinjal, especially carbohydrates, vitamins, proteins and fats, have been significantly increased.
