Dried cabbage is the dried form of fresh cabbage. Cabbage contains about 92% water. For this reason, 1 kg of dry cabbage remains from approximately 12-13 kg of cabbage as a result of drying. During drying, the water in the product evaporates and the core of the product remains. For this reason, the nutritional values of dried cabbage, especially carbohydrates, vitamins, and protein ratios have increased significantly.
